His two Michelin stars came due to his successful career as a chef, but he struggled with weight gain until he was 40 years old. He decided not to have lap-band surgery and instead used his extensive knowledge of food to help him change his diet and eliminate carbs. He lost 168 pounds after three years of following a healthy diet and limiting his alcohol consumption.
